Ladies, please help!?

I've been seeing my ex girlfriend again for 3 weeks and have wined and dined her along with expressing all of my feelings and intentions to get back together. She wants to wait. I came to meet up with her at a bar and she was in full force flirtation with some guy grabbing each others arms and really pushing the limit. I got her attention and mentioned I had been trying to get her attention for a couple of minutes. I acted really cool and didn't even mention the guy. In fact, I took the high road and introduced myself to the dude as I started to engage with her while acting like I was mr. social. So, do I bring it up now? I don't want to be the chump wining and dining her to get her back for good while she is acting single when I'm not around. If I bring it up, she'll get defensive and make me feel dumb for bringing it up. What should I do?
